Tuesday Edition: Kitchen Tip

This picture makes me so happy - with all of the bright colors and the gorgeous looking spices!  Sometimes I have such luck on Flickr, and sometimes I don't!.

As you may have guessed, today's tip is about dried herbs.  You can certainly buy dry herbs at the store and use them right away.  But what if you buy fresh herbs, and only have to use a tablespoon, but don't need the rest (I hate that!!!)?

According to Good Housekeeping, you can dry the fresh herbs my using the microwave.  Sounds good to me!  Let's learn how.

Arrange sprigs of thyme, oregano or rosemary in a single layer on a paper towel.  Microwave the herbs on high for 2 minutes or until dry and brittle.  Remove leaves from stems and crumble.  Store in an airtight container for up to one year.

No other herbs were specified, but I have an entire bunch of mint in my kitchen right now.  I may try a few sprigs to see how that goes.  Has anyone dried mint before?  Any tips?

  2. Okay, is it too late to make a New Year's Resolution? I'm going to grow some herbs this year. I love the idea of having fresh on-hand, but it seems like a lot of fuss for something you won't have year round... unless you find a way to save them for winter.
