Wednesday Edition: What's New

Continuing with another snack recipe, I thought I would share a recipe I recently made for protein bars.  I love eating protein bars after working out.  They are quick, easy and pack a lot of protein (duh), which fills me up.  This recipe is from Oxygen magazine (I couldn't find the recipe on their website).  The recipes calls for ground flaxseeds, which I had heard of, but never used.  So flaxseeds are the new ingredient!


No-Bake Oatmeal Protein Bars
Ingredients:
2 C quick-cooking oats
1/2 C peanut butter
4 scoops protein powder (I used chocolate)
1 T ground flaxseeds
1/2 C water

Instructions:
knead all ingredients in a large bowl
Line square baking pan with wax paper
Spread dough into pan using a spatula.  Optional: Spread a thin layer of PB on top of dough.  Place in freezer for 30 mins.

Remove from freezer and cut into bars.

Notes:  I forgot to add the water until I was kneading the dough and wondering why it wasn't pulling together like a dough.  Then I re-read the recipe and realized my mistake.  So the lesson in that is: read the recipe!  Also, the magazine doesn't say whether or not you should refrigerate the bars, but I think you should - it helps them hold their shape.  Lastly, the recipes says you will get 8 servings, but it doesn't say how many bars to cut the dough into.  So I suggest you slice in half, and then slice each half into 4 bars, making a serving size of 1 bar.  Edit: I updated the last 2 sentences to correct my math!

  1. I love that there is no sugar added! How do they taste? Does it feel like they needed sugar?

    Flax seeds are awesome - unlike chia, you actually HAVE to grind them in order to get the full nutritional benefit.

  2. Laura - they definitely need *something* because they are a little bland. Maybe some honey?

    My co-worker jokingly (or maybe not!) suggested adding mini m&m's, almonds, and dried fruit :)
