Chicken Cacciatore

In our latest quest for eating healthy, the Husband and I have started the Paleo diet.  Have you heard of this?  Well if you haven't, let me fill you in.  Basically, the diet denies you of your favorite foods - like potatoes, dairy, rice, cereals and beans - because our paleolithic ancestors did not eat those food and therefore our bodies are not adapted to process such foods.  Maybe I am being a little dramatic - after all that is just my analysis of the diet after not eating my favorite foods for a couple of days!

Actually, I think the basic rules of the diet may have some impact on our waistlines and health.  The Husband already looks skinnier.  But I don't think that the diet is sustainable for us since we are potato, dairy and pasta lovers.  But we will do it as long as we can!

So what do I make for dinner now?  Well last night I made chicken cacciatore with veggies on the side.  The recipe I followed was from the Paleo Diet book by Loren Cordain.  It was really good.  The chicken was really moist and it smelled delicious!

Chicken Cacciatore
adapted from "The Paleo Diet" by Loren Cordain
Ingredients:
4 bone in chicken breasts
1 tsp pepper
1 tsp dried oregano
1 red onion, sliced
2 C sliced mushrooms
1/2 C water
1 15 oz can crushed tomatoes
5-6 fresh tomatoes, diced
2-3 T fresh parsley, chopped


After baking

Instructions:
Place chicken pieces in large baking dish.  Sprinkle with pepper and oregano.  Cover chicken with  onion and mushroom.  Pour in water to cover bottom of dish.  Spread tomatoes over the chicken mixture and top with sprinkles of the parsley.  Cook at 350 F for about an hour or until it is done.


Like I said, it was really good and very filling!  I would definitely make it again, regardless of what "diet" I am following.
