Manic Monday

Hi there!  Long time no see.

The Toddler, the Husband and I traveled to Pennsylvania last week to attend the Husband's brother's wedding last Saturday.  Both the Toddler and the Husband were in it and we had a lot of fun.  Lots of time spent with family, lots of dancing, and lots of good food.  In fact, we found out that the Toddler is a party girl.  She was on the dance floor all night until the DJ played a slide show, and then she did this:


We got home late yesterday afternoon and had to play catch up with everything around the house.  You know - laundry, cleaning, grocery shopping, etc.  I am still trying to catch up - hence "Manic Monday" as the title of the post.  But I hadn't cooked since Wednesday and I really wanted to do that.  And I wanted a "fall meal" since the weather is cooler.  On the fly I came up with: grilled turkey kielbasa, pierogies and roasted brussel sprouts.


For the kielbasa, I just threw it on the grill for about 15 minutes or so.  For the pierogies, I bought a box of frozen mini pierogies and cooked them up in a skillet with some butter and onions.  YUM.  I could eat an entire box of these.

I could have also eaten the entire pan of brussel sprouts (which the Husband would be thankful for).  For those, I take frozen brussel sprouts and put them in a baking dish and drizzle with some olive oil and sprinkle on some salt and pepper.  Put in a 400 F oven for about 20-30 minutes depending on how brown you like them.


Even the Toddler likes 'em!
