Beef Sirloin Tips with Smoky Pepper Sauce

I am constantly looking for new recipes to try.  The Husband is usually up for the experimenting.  But quite frankly, a lot of the recipes get trashed after only one try.  Does that happen to you?

I saw this recipe for Beef Sirloin Tips in Better Homes and Gardens, and the picture is what caught my eye.  It looks like a great fall meal that I would devour.  And this one is a keeper if I can make it again without overcooking the meat!



Beef Sirloin Tips with Smoky Pepper Sauce

Ingredients:
1.5 lbs beef sirloin tip steak
1/2 tsp. smoked paprika or paprika (AFC note: I used smoked paprika)
i T vegetable oil
1 12-16 oz jar roasted red and/or yellow sweet peppers
1/2 C hickory or mesquite-flavor BBQ sauce (AFC note: I used Kraft Hickory BBQ sauce)
1/4 C chopped flat leaf parsley

Instructions:
Trim beef and cut into 1 inch chunks; sprinkle with paprika.  In 12-inch skillet, heat oil over medium-high heat.  Add meat and brown for 5 minutes or until desired doneness.  Remove from skillet and keep war,

Meanwhile, drain peppers and reserve the liquid.  Cut up the peppers.  Measure 1/2 C of the reserved liquid (adding water to get up to 1/2 C if necessary).  Add peppers and liquid to skillet.  Add BBQ sauce.  Cook, uncovered, for 5-10 minutes, stirring frequently, until sauce is thickened.  Return meat to skillet and heat through.

Serve with mashed potatoes, couscous or polenta.  Sprinkle with parsley. 

I served with polenta.  Picture not a yummy looking as BHG's!
